Born to a Chicago native that vividly recalls watching Lou Malnati open his first restaurant just down the street from his parent’s home, pizza has flowed through the Cary brothers’ veins like a robust marinara flows over an order of garlic knots. From birth, the Cary brothers have been raised on a love of pizza. From the yearly pilgrimages to the mecca that is Pizzeria Uno, trying all the local pizzerias, comparing notes on every frozen pizza brand known to mankind, routine visits to the original Lou Malnati’s that's just down the street from their grandmother’s home, and even roaming the streets of New York in search for the best slice, it is this love of pizza that has brought the brothers here today, with the founding of Bobo’s Pizzeria.
Bobo’s Pizzeria is based on one simple principle, sharing great pizza with those who have yet to experience it. We are committed to providing the best possible pizza to both our family and customers by utilizing the best ingredients that we can source and sticking to our firmly held belief that we only want to serve what we would want to eat ourselves. If our Chicago roots have taught us anything, it’s that a pretty Instagram pizza does not make a great pizza. Sure, a pretty pizza might be great, but great pizza is truly about using quality ingredients, going heavy on the toppings and being able to provide a consistent, delicious pizza that will taste the exact same 50 years from now as it does today. Yes, it’s true that we eat with our eyes, but when it comes to great pizza, it’s all about taste.
